Buckeyes

Several people have expressed an interest in my recipe for Buckeyes. These yummy treats are a long-held tradition for my family, as well as a regional favorite in Indiana and Ohio. And the best part? They're soooooooo easy to make and incredibly delicious! Enjoy!

3 cups Rice Crispies
1 stick butter (or margerine)
2 cups smooth peanut butter
1 lb. box powdered sugar

Mix all of the above ingredients well and form into 1 inch diameter balls.

12 oz bag of chocolate chips, milk or semi-sweet, your preference.

Melt the chips about a half cup at a time in a bowl in the microwave. Stir to smooth and dip just one side of the candy balls in the melted chocolate, so it looks like an acorn. Arrange the dipped candy on waxed paper to let the chocolate harden. Repeat, adding more chocolate chips and reheating as needed, until all candy has been dipped.

These can be safely frozen until Christmas if you'd like. Or just eat them straight off the waxed paper. I promise they won't last long!
